A tasty soup that combines the comforting elements of chicken tortilla soup with the richness of tortellini cheese. Great for a cozy night in or having people over. A tasty way to use up extra mashed potatoes is to make these crispy fritters. They are a tasty snack or side dish because they are full of sweet corn and gooey cheddar cheese. Ingredients: 2 cups mashed potatoes 1 cup canned corn kernels, drained 1 cup shredded cheddar cheese 1/4 cup all-purpose flour 2 eggs 1/4 cup chopped fresh chives Salt and pepper to taste Vegetable oil for frying Instructions: In a large mixing bowl, combine mashed potatoes, corn, cheddar cheese, flour, eggs, chives, salt, and pepper Mix until well combined Heat vegetable oil in a frying pan over medium heat Scoop about 1/4 cup of the potato mixture and form into a patty Carefully place the patty into the hot oil and fry until golden brown on both sides, about 3-4 minutes per side Remove the fritters from the oil and drain on paper towels to remove excess oil Serve hot and enjoy!
