Beef & Pasta Tomato Soup - Lord Byron's Kitchen
This hearty Beef & Pasta Tomato Soup is a comforting and satisfying meal, perfect for chilly days. Ground beef, onions, garlic, diced tomatoes, and pasta simmered in a flavorful broth create a delicious soup that will warm you up from the inside out.
Ingredients:
- 1 pound ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can 28 ounces diced tomatoes
- 4 cups beef broth
- 1 cup water
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup uncooked small pasta such as macaroni or small shells
- 1/4 cup chopped fresh parsley
- Grated Parmesan cheese for serving optional
Instructions:
In a large pot or Dutch oven, cook the ground beef over medium heat until browned, breaking it up into crumbles as it cooks
Add the diced onion and minced garlic to the pot
Cook until the onion is translucent, about 5 minutes
Stir in the diced tomatoes with their juices, beef broth, water, basil, oregano, thyme, salt, and pepper
Bring the mixture to a simmer
Once simmering, add the uncooked pasta to the pot
Cook according to the package instructions until the pasta is tender, stirring occasionally
Taste and adjust the seasoning with additional salt and pepper if needed
Stir in the chopped parsley
Serve the soup hot, garnished with grated Parmesan cheese if desired
