Cheesy Chicken Tortilla Tortellini Soup
A tasty soup that combines the comforting elements of chicken tortilla soup with the richness of tortellini cheese. Great for a cozy night in or having people over.
Ingredients:
- 1 lb chicken breast, cooked and shredded
- 6 cups chicken broth
- 2 cups cheese tortellini
- 1 cup salsa verde
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup diced tomatoes
- 1 cup shredded cheese blend
- 1/2 cup chopped fresh cilantro
- 1/4 cup diced green chilies
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Tortilla strips for garnish
Instructions:
Put black beans, corn, tomatoes, green chilies, garlic, cumin, and chili powder in a large pot
Add salsa verde and mix well
Bring up the temperature
Add the cheese tortellini to the pot and cook it the way the package says to
Turn down the heat once the tortellini is done
Shred the chicken, shred the cheese, and chop the cilantro
Keep cooking until the cheese melts and the soup is hot all the way through
Add pepper and salt to taste
Serve hot with tortilla strips on top
