Corn & Cheddar Potato Fritters
A tasty way to use up extra mashed potatoes is to make these crispy fritters. They are a tasty snack or side dish because they are full of sweet corn and gooey cheddar cheese.
Ingredients:
- 2 cups mashed potatoes
- 1 cup canned corn kernels, drained
- 1 cup shredded cheddar cheese
- 1/4 cup all-purpose flour

- Salt and pepper to taste
- Vegetable oil for frying
Instructions:
In a large mixing bowl, combine mashed potatoes, corn, cheddar cheese, flour, eggs, chives, salt, and pepper
