Chocolate Mocha Beet Donuts



These Chocolate Mocha Beet Donuts are a delightful gluten-free and vegan treat. The addition of beets not only adds natural sweetness but also a gorgeous color. They are perfect for breakfast or as a guilt-free dessert.

Ingredients:

  • 1 cup gluten-free flour blend
  • 1/4 cup cocoa powder
  • 2 tsp instant coffee granules
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup cooked and pureed beets
  • 1/3 cup maple syrup
  • 1/4 cup almond milk or any non-dairy milk
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1/4 cup dairy-free chocolate chips optional

Instructions:

Preheat your oven to 350F 175C

In a mixing bowl, combine the gluten-free flour, cocoa powder, instant coffee granules, baking powder, baking soda, and salt

In another bowl, whisk together the pureed beets, maple syrup, almond milk, melted coconut oil, and vanilla extract

Pour the wet ingredients into the dry ingredients and mix until well combined

If desired, fold in dairy-free chocolate chips

Grease a donut pan and spoon the batter into the molds, filling each one about 3/4 full

Bake in the preheated oven for 15-18 minutes or until a toothpick comes out clean when inserted into a donut

Allow the donuts to cool in the pan for a few minutes before transferring them to a wire rack to cool completely

Once cool, you can optionally drizzle melted dairy-free chocolate on top for extra flavor
