Winter Shrimp, Avocado & Grapefruit Salad



This salad is great for the winter because it is healthy and refreshing, with delicious shrimp, creamy avocado, and tangy grapefruit. Red onion, cilantro, and roasted pecans give the dish more flavor and texture.

Ingredients:

  • 12 large shrimp, peeled and deveined
  • 2 ripe avocados, sliced
  • 2 pink grapefruits, segmented
  • 4 cups mixed salad greens
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh cilantro leaves
  • 1/4 cup chopped roasted pecans
  • Salt and pepper to taste

Instructions:

Season the shrimp with salt and pepper

Heat a grill or grill pan over medium-high heat and grill the shrimp for 2-3 minutes per side until they turn pink and opaque

Set aside

In a large salad bowl, arrange the salad greens

Top the greens with avocado slices, grapefruit segments, grilled shrimp, red onion, and cilantro

Sprinkle the salad with chopped roasted pecans

Drizzle your favorite vinaigrette dressing over the salad, or use a simple mixture of olive oil and lemon juice

Toss the salad gently to combine all the ingredients

Serve immediately and enjoy your winter salad!
