Brown Sugar Toffee Cookies
Ingredients:
- 1 cup brown sugar
- 1/2 cup unsalted butter, softened
- 1 egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup toffee bits
Instructions:
Preheat the oven to 350F 175C and line a baking sheet with parchment paper
In a large bowl, cream together the brown sugar and softened butter until light and fluffy
Beat in the egg and vanilla extract until well combined
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt
Gradually add the dry ingredients to the wet ingredients, mixing until just combined
Fold in the toffee bits, distributing them evenly throughout the cookie dough
Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet
Bake in the preheated oven for 10-12 minutes or until the edges are golden brown
Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
Once completely cooled, the cookies are ready to be enjoyed!
