Ingredients:

  • 1 package of tempeh, sliced into thin strips
  • 1 cup of crushed tortilla chips
  • 2 tablespoons of nutritional yeast
  • 1 teaspoon of chili powder
  • 1 teaspoon of cumin
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of onion powder
  • Salt and pepper to taste
  • 1 tablespoon of olive oil
  • 8 small tortillas
  • Your favorite taco toppings suggestions: shredded lettuce, diced tomatoes, avocado slices, salsa, lime wedges

Instructions:

Start by heating the oven to 400F 200C

Crush the tortilla chips and mix them with nutritional yeast, chili powder, cumin, garlic powder, onion powder, salt, and pepper in a shallow bowl

Apply olive oil to both sides of the tempeh strips

Spread the tempeh strips out evenly in the tortilla chip mixture as you roll them in it

Cover the tempeh strips with the sauce and put them on a baking sheet that has parchment paper on it

After the oven is hot, bake the tortilla crust for 15 to 20 minutes, or until it is golden brown and crispy

Warm up the tortillas in a pan or the microwave while the tempeh is baking

Put a few strips of crispy tempeh on each tortilla and then add your favorite taco toppings on top of that

Serve right away with lime wedges on the side so you can squeeze them over the tacos

Enjoy your tasty vegan tacos that are full of protein!
