Quinoa, Feta, and Grilled Zucchini Salad
Ingredients:
- 1 cup quinoa
- 2 cups water
- 2 medium zucchinis, sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup crumbled feta cheese
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 2 tablespoons lemon juice
- 2 tablespoons balsamic vinegar
- 1 teaspoon honey
- 1/4 cup extra-virgin olive oil
Instructions:
Run cold water over the quinoa several times to clean it
Bring 2 cups of water to a boil in a medium-sized saucepan
Then add the rinsed quinoa
Lower the heat, cover, and let it simmer for about 15 minutes, or until the quinoa is soft and the water is gone
Take it off the heat and let it cool down
Set a grill or grill pan over medium-high heat to get it hot
Add salt and pepper to the zucchini slices and toss them with 2 tablespoons of olive oil
Slice the zucchini and grill it for two to three minutes on each side, or until it gets grill marks and is soft
Take them off the grill and let them cool down a bit
Flake the feta cheese, add the grilled zucchini, cherry tomatoes, red onion, and fresh parsley to a large salad bowl
To make the dressing, mix the honey, basil, lemon juice, and extra-virgin olive oil in a small bowl with a whisk
Pour the dressing over the salad and mix it all together
To taste, add more salt and pepper to the food
Put the salad in the fridge for at least 30 minutes before you serve it so that the flavors can mix
Enjoy! Serve cold
