Hemp Hummus Pita Pockets
These vegetarian pita pockets with hemp hummus are tasty and nourishing. The fresh veggies and feta cheese give your sandwich a flavorful burst, and the creamy hemp hummus adds extra protein and a nutty flavor. Ideal for a quick and wholesome supper or lunch!
Ingredients:
- 1 cup canned chickpeas, drained and rinsed
- 1/4 cup hemp seeds
- 3 tablespoons tahini
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1/2 teaspoon cumin
- 1/4 teaspoon paprika
- Salt and pepper to taste
- 4 whole wheat pita pockets
- 1 cup mixed greens
- 1/2 cup cucumber, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 2 tablespoons fresh parsley, chopped
- Olive oil for drizzling
Instructions:
In a food processor, combine chickpeas, hemp seeds, tahini, lemon juice, minced garlic, cumin, paprika, salt, and pepper
Blend until smooth and creamy
Cut the tops off the pita pockets and warm them in the oven or toaster for a few minutes
Spread a generous amount of the hemp hummus inside each pita pocket
Fill the pockets with mixed greens, diced cucumber, halved cherry tomatoes, sliced red onion, crumbled feta cheese, and chopped fresh parsley
Drizzle with olive oil and season with additional salt and pepper if desired
Serve the hemp hummus pita pockets immediately and enjoy!
