Lemon-Coconut Parfait



Indulge in the delightful combination of zesty lemon, creamy yogurt, and the tropical flavor of coconut in this refreshing Lemon-Coconut Parfait.

Ingredients:

  • 1 cup lemon curd
  • 1 cup shredded coconut
  • 2 cups Greek yogurt
  • 1/2 cup granola
  • 1/4 cup honey
  • 1 teaspoon vanilla extract

Instructions:

In a bowl, mix Greek yogurt with vanilla extract until well combined

In serving glasses or bowls, layer the bottom with a spoonful of lemon curd

Add a layer of the yogurt mixture on top of the lemon curd

Sprinkle shredded coconut over the yogurt layer

Repeat the layers until the glass is almost full

Top the parfait with granola for added crunch

Drizzle honey over the top as a finishing touch

Repeat the process for additional servings

Refrigerate for at least 1 hour before serving to allow flavors to meld

Serve chilled and enjoy!
