Vegan Oatmeal Wheat Pancake Mix



This recipe is a vegan take on the classic oatmeal wheat pancakes. It uses plant-based ingredients along with the healthy benefits of oat flour and whole wheat flour to make a tasty and healthy breakfast option.

Ingredients:

  • 2 cups oat flour
  • 1 cup whole wheat flour
  • 2 tablespoons ground flaxseed
  • 2 tablespoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons coconut sugar
  • 2 cups plant-based milk such as almond or soy
  • 2 tablespoons apple cider vinegar
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract

Instructions:

Mix ground flaxseed, oat flour, whole wheat flour, baking powder, salt, and coconut sugar in a large bowl

Mix plant-based milk and apple cider vinegar in a different bowl

Let it sit for five minutes to get curdled

To the milk mix, add vanilla extract and melted coconut oil

Add the wet ingredients to the dry ones and mix them together just until they are mixed

Don't mix it too much; lumps are fine

Warm up a griddle or skillet that doesn't stick over medium heat

If you need to, lightly grease with coconut oil

For each pancake, put 1/4 cup of batter on the pan

Once the pancake starts to bubble on top, flip it over and cook until the other side is golden brown

Warm it up and top it with your favorite things, like vegan butter, fresh fruit, or maple syrup
