Quinoa Veggie Burger
A delicious and nutritious veggie burger made with quinoa, black beans, and flavorful spices. These Quinoa Veggie Burgers are not only easy to make but also packed with protein and fiber, making them a perfect meatless meal option.
Ingredients:
- 1 cup cooked quinoa
- 1 can black beans, drained and rinsed
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped red onion
- 1/4 cup finely chopped bell pepper
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh cilantro
- 1/4 cup shredded cheddar cheese
- 1 egg, beaten
- 4 whole wheat burger buns
- Lettuce, tomato, and your favorite toppings for serving
Instructions:
Use a fork or potato masher to mash the black beans in a large bowl
The mashed black beans should have red onion, bell pepper, garlic, cumin, paprika, salt, black pepper, cilantro, shredded cheddar cheese, and an egg that has been beaten added to them
Once all the ingredients are mixed together, mix them well
Split the mixture in half and shape each half into a burger patty
Over medium-low heat, cook the patties for four to five minutes on each side, or until they are golden brown and fully cooked
In a skillet, toast the whole wheat burger buns for one to two minutes, until they get a little brown
Add lettuce, tomato, and any other toppings you like to the burgers
You can eat the Quinoa Veggie Burgers with a green salad or sweet potato fries
