PEI Mussel Poke



This PEI Mussel Poke recipe combines the freshness of seafood with the bold flavors of a classic poke dish. PEI mussels are marinated in a savory blend of soy sauce, sesame oil, and rice vinegar, then quickly cooked until tender. Served over a bed of sushi rice or salad greens and topped with vibrant diced vegetables, this dish is as visually appealing as it is delicious.

Ingredients:

  • 1 lb PEI mussels, cleaned and debearded
  • 1/4 cup soy sauce
  • 2 tbsp sesame oil
  • 2 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tsp grated ginger
  • 1 tsp minced garlic
  • 1/4 cup chopped green onions
  • 1/4 cup diced cucumber
  • 1/4 cup diced mango
  • 1/4 cup diced avocado
  • 1 tbsp sesame seeds
  • Cooked sushi rice or salad greens, for serving

Instructions:

To make the marinade, mix the soy sauce, sesame oil, rice vinegar, honey, ginger, and garlic in a small bowl with a whisk

Clean the mussels and remove the beards

Put them in a large bowl and pour the marinade over them

Toss the mussels to cover them all evenly

Put it in the fridge for at least 30 minutes with the lid on

Use medium-high heat to warm up a big skillet

Add the mussels that have been marinated

Cook, stirring every now and then, for 5 to 7 minutes, or until the mussels open

Take the mussels out of the pan when they're done cooking and throw away any that haven't opened

To serve, put cooked sushi rice or salad greens in a bowl

Put cooked mussels on top and sprinkle with sesame seeds, chopped green onions, diced cucumber, mango, and avocado

If you want, you can serve it right away with extra sesame seeds and green onions on top
