Coffee Sugar Cookies with Browned Buttercream Filling
Ingredients:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 2 teaspoons instant coffee granules
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- For Browned Buttercream Filling:
- 1/2 cup unsalted butter
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 2-3 tablespoons heavy cream
Instructions:
Put softened butter and granulated sugar in a bowl and mix them together until they are light and fluffy
Beat the egg and instant coffee granules into the butter mixture until everything is well mixed together
Mix the flour, baking powder, and salt together in a different bowl
Mix the dry ingredients into the wet ingredients one at a time until a dough forms
The vanilla extract should be added
Make a disc out of each half of the dough
Cover with plastic wrap and put in the fridge for at least an hour
Warm the oven up to 350F 175C and put parchment paper on a baking sheet
On a floured surface, roll out the chilled dough until it is about 1/4 inch thick
Cut out the shapes you want with cookie cutters
Put the cookies with the shapes on the baking sheet that has been prepared
Bake for 8 to 10 minutes, or until the edges are just beginning to turn golden
The cookies should cool for a few minutes on the baking sheet before being moved to a wire rack to cool all the way
Put the butter in a saucepan and melt it over medium-low heat
This will make the browned buttercream filling
While cooking, keep stirring the butter often until it turns golden brown and smells nutty
Take it off the heat and let it cool down a bit
The browned butter, powdered sugar, vanilla extract, and 2 tablespoons of heavy cream should all be mixed together in a bowl
Mix the ingredients together until they are smooth and creamy
If you need to, add more cream to get the consistency you want
Spread a lot of the browned buttercream filling on the bottom of a cookie that has already cooled, and then put another cookie between them
Fill and sandwich the rest of the cookies in the same way
Set the filled cookies aside for about 30 minutes before serving
